Slow Cooked Lamb
THIS RECIPE IS DEEPLY NOURISHING AND SUPPORTS THE CONNECTIVE TISSUE IN THE GASTROINTESTINAL LINING, SUPPORT NUTRIENT STATUS (HELLO IRON!) AND ALSO IS DENSE IN MICRONUTRIENTS.
To create this superfood meal combine in a slow cooker and cook for 4-8 hours on high -
2 organic grass fed lamb shanks (lightly brown in a pan beforehand)
1 cup organic tomato passata
1 litre high quality bone broth (beef, lamb, chicken)
4 tablespoons apple cider vinegar
A dash of local honey
1.5 teaspoon celtic or himalayan salt
1.5 teaspoon pepper
4 bay leaves
4 sprigs rosemary
1 handful oregano
1 handful thyme
3 cloves garlic
1 tablespoon organic veggie stock paste
Mashed pumpkin or sweet potato to serve (tip add in 1 tbsp ghee or butter)
