Simple Red Pesto

A SIMPLE RED PESTO

I use this beautiful sauce to fry eggs, mix through pastas, for salads and as a dip! 

Here is the recipe -

  • 1.5 cups of soaked cashews

  • 3 red capsicums 

  • 1 red chilli 

  • handful of cherry tomatoes 

  • juice of a lemon 

  • 2 tbsp Parmesan/nutritional yeast 

  • Good quality salt & pepper 

  • 2 garlic cloves 

Roast the veg and blend into your desired consistency. Red chilli contains capsaicin which is helpful in reducing prostaglandins that cause period pain! I love adding this into dishes before menstruation.
