Simple Red Pesto
A SIMPLE RED PESTO
I use this beautiful sauce to fry eggs, mix through pastas, for salads and as a dip!
Here is the recipe -
1.5 cups of soaked cashews
3 red capsicums
1 red chilli
handful of cherry tomatoes
juice of a lemon
2 tbsp Parmesan/nutritional yeast
Good quality salt & pepper
2 garlic cloves
Roast the veg and blend into your desired consistency. Red chilli contains capsaicin which is helpful in reducing prostaglandins that cause period pain! I love adding this into dishes before menstruation.
