Zucchini Focaccia

This recipe actually tastes like a slice of focaccia but it’s gluten, grain and dairy free. Which is unbelievable it’s so soft and spongy!

Preheat your oven to 180 degrees.

You will need:

  • 3 cups grated zucchini

  • 6 eggs

  • 1 tablespoon bone broth (powder or paste)

  • 1/4 cup olive oil

  • 1/2 almond flour

  • 1/2 cup buckwheat flour

  • Plenty of crushed rosemary

  • Sprinkle of thyme, fresh parsley

  • 1/3 cup chopped sun dried tomatoes

  • 2 tsp baking powder

  • Salt & pepper

  • 2 cloves of garlic crushed

  • 1/4 Cup goats cheese

1. Heat oven 180 degrees

2. Grate the zuccini and squeeze the excess water out of it with a dish cloth or nut milk bag

3. Then whisk eggs, oil, herbs together

4. Add in flour and the rest of the ingredients

5. Pour into a greased/lined baking tray

6. Top with more olive oil and Rosemary

7. Bake for 35 minutes until firm and golden
