Nourish Butter Chicken
This butter chicken gives a healthy twist to the classic recipe with plenty of added nutrients from the bone broth which is rich in collagen and amino acids helpful in building the gut lining and immune system.
Ingredients:
- 1 heaped tbsp bone broth paste (I use Gevity)
- 2 large chicken breasts or thighs sliced
- Fresh spices - curry paste, turmeric powder, bay leaf, grated ginger thumb, lemongrass or a curry paste (I like the Mingle brand from the supermarket)
- 1 can of coconut cream
- 1/2 cup cool water
- 1 onion sliced
- 2 large tablespoons of tomato paste
- 2 cups veggies - I like zucchini, carrots, mushrooms, broccoli
- Juice of half a lemon
-1/2 cup greek or goats yogurt (if DF omit)
- A large pinch of sea salt and black better
- Soaked basmati rice cooked
- 1 heaped tbsp butter or ghee
Instructions:
1. Mix the chicken, yogurt, lemon and spices together and set aside
2. Chop the onion and the veggies into chunky slices
3. Slowly heat up your pan and add in the ghee or butter (or coconut oil if DF)
4. Add in your chicken yogurt mix and lightly brown for 2 minutes
5. Add your vegetables, bone broth, coconut cream and the rest of your ingredients and simmer on low until the veggies and chicken are cooked through
6. Serve with your rice and fresh coriander
Note: You can add different vegetables or herbs to this recipe based on your taste preference.
