Collagen Brownie Bites
This recipe is made for those with PCOS, acne and blood sugar dysregulation as it is super high in protein, MCT fats and low in added sugars which is something I am always discussing with my clients in clinic.
The reason I absolutely love this collagen powder is because collagen forms all of the structural elements of our bodies and is the most abundant protein in the body. This snack or dessert is a staple for me as I am always trying to regulate my blood sugars without snacks becoming boring.
I use collagen powder for most of my clients to replace conventional ‘protein powders’ as I find they can be harsh on the digestion and grainy in texture and it is wonderful to use in bliss balls or a recipe like this to replace dates and coconut sugar which I find creates a larger glucose spike.
Recipe (these are seriously addictive) -
1/4 cup smooth nut butter (almond/peanut)
1/4 cup ghee or coconut oil if DF
1 cup almond meal
1/2 cup collagen powder
2 heaped tbsp cacao powder
1/2 tsp cinnamon powder
1/4 cup almond milk
1/2 block dark chocolate chopped (90% dark or sugar free if on SIBO diet)
1 pinch of sea salt
Slowly melt ghee/coconut oil and nut butter in a small pan until liquid consistency
Add your dry ingredients (almond meal, collagen, cacao, cinnamon, salt, chocolate) into a mixing bowl and combine
Add in wet ingredients to the bowl and stir until well mixed
Scoop into a lined mould and pop in the fridge for 2 hours or until set
