Anti-inflammatory broth w chicken
Ingredients: - 1 organic chicken carcass or 2-3 organic chicken legs with bones - 8 cups filtered water - 2 celery stalks, chopped - 2 carrots, chopped
- 1 head bok choy - 1 onion, chopped - 4 garlic cloves, minced - 1-inch piece of fresh ginger, peeled and sliced - 1 tablespoon apple cider vinegar - 1 teaspoon turmeric powder
- 1 heaped tbsp bone broth (I use gevity)
- 1 handful coriander (washed and roots too) -
1/2½teaspoon cayenne pepper (adjust to taste)
- Sea salt and black pepper to taste
- 1 packed gluten-free brown rice noodles
- Fresh coriander and parsley, chopped (for garnish)
- Lime wedges (for serving)
Instructions:
1. In a large pot, combine the chicken carcass or chicken legs, water, celery, carrots, onion, garlic, ginger, apple cider vinegar, turmeric powder, cayenne pepper, sea salt, and black pepper.
2. Bring the mixture to a boil, then reduce the heat and let it simmer for about 4-6 hours. This slow simmering allows the nutrients and minerals from the bones to infuse into the broth.
3. After simmering, strain the broth to remove any solids, and discard them.
4. Return the strained broth to the pot and bring it back to a simmer.
5. Add the rice noodles to the broth and cook according to the package instructions until they are al dente.
6. While the noodles are cooking, shred the chicken meat from the carcass or chicken legs, discarding the bones and skin.
7. Once the noodles are cooked, add the shredded chicken back and the greens into the pot and allow it to warm through.
8. Serve the soup hot, garnished with fresh cilantro and lime wedges on the side.
