Collagen Pancakes

Ingredients: - 2 ripe bananas - 4 eggs - 1/4 cup almond flour - 2 tablespoons collagen powder - 1 teaspoon baking powder - 1/2 teaspoon cinnamon - Pinch of salt - Coconut oil (for cooking) - Optional toppings: berries, nut butter, pure maple syrup Instructions: 1. In a mixing bowl, mash the bananas until smooth. 2. Add the eggs to the bowl and whisk until well combined. 3. In a separate bowl, mix together the almond flour, collagen powder, baking powder, cinnamon, and salt. 4. Slowly add the dry ingredients to the banana and egg mixture, stirring until a smooth batter forms. 5. Heat a non-stick skillet or griddle over medium heat and add a small amount of coconut oil to coat the surface. 6. Spoon about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown. 7. Repeat the process with the remaining batter, adding more coconut oil as needed. 8. Serve the pancakes with your choice of toppings, such as berries, nut butter, or pure maple syrup.
